pistachio cupcakes.


in honor of st. patrick's day i give you pistachio cupcakes!  i personally love anything pistachio and these are perfect.  i went the easy way and used a cake mix + pistachio pudding and you would never have guessed it.  i have seen recipes for pistachio cupcakes that use ground up pistachios mixed with the flour but that seemed a bit much for me to handle at the time.  easy is better anyway, right?!

ingredients:

1 box white cake mix {i used duncan hines} and all the ingredients needed for the mix
1 3.4 ounce box pistachio pudding mix
buttercream frosting, recipe below
white chocolate shavings

directions:

combine cake mix and it's ingredients per package instructions.  add in pudding mix and combine well.  for cupcakes, fill cupcake liners about halfway full with batter.  bake as directed on cake mix packaging {i always bake mine 2-3 minutes less than the package says}.  cool and frost with buttercream frosting.

buttercream frosting:

1 cup butter, softened
5-6 cups powdered sugar
2-4 tablespoons milk
2 teaspoons vanilla

in a large mixing bowl beat butter until smooth.  gradually add 2 cups of powdered sugar, beating well.  slowly beat in milk and vanilla.  gradually beat in the remaining powdered sugar 1 cup at a time {i taste mine after each cup and stop when it's just sweet enough - i don't like it overly sweet}.  beat in enough additional milk to reach spreading consistency.

pipe on cupcakes and top with white chocolate shavings.

i must admit to never trying anything pistachio flavored--but this recipe sounds delish--might have to give this a try!
